Hearty Beef Vegetable Soup

A comforting bowl of homemade beef vegetable soup packed with tender beef, vibrant veggies, and bold flavors.

  • 2 lbs beef brisket, chuck, or stew meat
  • 4 cups Russet or Yukon Gold potatoes, chopped
  • 3 large carrots, chopped
  • 1 cup peas, fresh or frozen
  • 1 can (14.5 oz) diced tomatoes
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 68 cups beef broth
  • 1 tablespoon oil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Brown the beef: Start by heating a tablespoon of oil in a large pot over medium heat. Add your beef in batches, making sure not to overcrowd it. Let it brown for about 3-4 minutes on each side.
  2. Sauté the aromatics: Remove the beef from the pot and set aside. In the same pot, add chopped onions and garlic, and sauté them until tender and fragrant, about 4-5 minutes.
  3. Add the veggies: Toss in your chopped carrots and potatoes, stirring for a minute. Then add the canned tomatoes and stir until combined.
  4. Simmer the soup: Return the beef to the pot. Pour in enough broth to cover everything, around 6 to 8 cups. Bring to a boil, then lower the heat and simmer for 90-120 minutes.
  5. Add the peas: When the beef is fork-tender, throw in the peas and simmer for an additional 10 minutes.
  6. Season & serve: Taste the soup and season with salt and pepper. Optionally add herbs like thyme or rosemary.

Notes

A splash of Worcestershire sauce right before serving adds unexpected depth.
