Cabbage Roll Soup

A comforting soup that combines all the delightful flavors of traditional cabbage rolls without the hassle of rolling.

  • 1 lb ground beef
  • 2 cups fresh green cabbage, chopped
  • ½ cup uncooked long-grain white rice
  • 1 (14.5 oz) can diced tomatoes
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Sauté the aromatics: In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion turns translucent, about 3-5 minutes.
  2. Brown the beef: Increase the heat slightly and add the ground beef. Break it apart and cook until browned, roughly 5-7 minutes. Drain excess grease if needed.
  3. Add the rice: Stir in the uncooked rice, mixing it with the beef and onions.
  4. Pour in the diced tomatoes and beef broth. Add the chopped cabbage and stir everything together.
  5. Season it up: Sprinkle in the Italian seasoning, salt, and pepper. Stir well.
  6. Simmer away: Bring the soup to a gentle boil, then reduce to low and let it simmer for 20-25 minutes.
  7. Check for doneness: Ensure the rice is tender and the cabbage is wilted.
  8. Serve it up: Taste and adjust seasoning. Optionally, add a splash of lemon juice before serving.
