Cheeseburger Soup

A cozy and comforting soup that combines all the flavors of a cheeseburger in a delicious bowl.

Ingredients

  • 1 lb Ground Beef
  • 2 Potatoes, diced
  • 2 Carrots, sliced
  • 1 cup Cheddar Cheese, shredded
  • 2 cups Milk
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 4 cups Beef Broth
  • 1 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Brown the beef: In a large pot, heat olive oil over medium-high heat. Add the ground beef and cook until browned.
  2. Add the diced onions and minced garlic. Stir and let sweat for 2-3 minutes.
  3. Add the diced potatoes, sliced carrots, and pour in enough beef broth to cover the veggies. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  4. Pour in the milk and stir in the shredded cheddar cheese until melted.
  5. Serve the soup ladled into bowls and top as desired.

Notes

For a lighter option, substitute ground beef with turkey or chicken. To customize, try adding crumbled bacon, spinach, or jalapeños.
