Chicken Fajita Soup

A deliciously hearty Chicken Fajita Soup packed with vibrant flavors and textures, perfect for any occasion.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 cup chopped bell peppers (red, yellow, green)
  • 1/2 cup chopped onions
  • 1 packet fajita seasoning or homemade mix
  • 4 cups chicken broth (or vegetable broth)
  • 1 can black beans or pinto beans, drained and rinsed
  • Optional toppings: sour cream, avocado slices, fresh cilantro, shredded cheese, tortilla strips

Instructions

  1. Prepare the chicken: Slice your chicken into bite-sized pieces. Heat olive oil in a large pot over medium heat. Season the chicken with salt and pepper, and cook for 5-7 minutes until browned and cooked through.
  2. Add the veggies: Toss in your chopped peppers and onions. Sauté for 3-5 minutes until they’re tender and fragrant.
  3. Seasoning time: Sprinkle in your fajita seasoning. Stir to combine and allow the spices to toast for about a minute.
  4. Pour in the broth: Add the chicken broth and bring to a gentle simmer.
  5. Introduce the beans: Stir in your beans and let the soup simmer for another 10-15 minutes.
  6. Taste and adjust: Taste your soup and adjust seasoning if necessary.

Notes

This soup can be made ahead of time and tastes even better the next day. Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
