A comforting and hearty Chicken Parmesan Soup that combines the classic flavors of chicken parmesan into a brothy delight, perfect for cold days.

  • 1 pound boneless, skinless chicken breasts or thighs
  • 4 cups chicken broth
  • 1 jar (24 ounces) marinara sauce
  • 1 cup small pasta (ditalini or elbow)
  • 1 cup freshly grated Parmesan cheese
  • 34 minced garlic cloves
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot over medium heat, drizzle in a tablespoon of olive oil. Once hot, add minced garlic and sauté until fragrant (about 30 seconds).
  2. Brown the chicken: Add cubed chicken, seasoned with salt and pepper, to the pot. Sauté until browned all over (about 5-7 minutes).
  3. Bring on the soup base: Once the chicken is fully cooked, pour in chicken broth and marinara sauce. Stir to combine and bring to a simmer.
  4. Add pasta and simmer: Stir in pasta and let cook together for about 10-12 minutes (or until al dente).
  5. Cheesy goodness: Once the pasta is cooked, stir in grated Parmesan to melt and infuse the soup. Reserve some cheese for serving.
  6. Final seasoning: Taste the soup and adjust seasoning as needed.
  7. Serve and enjoy: Ladle soup into bowls, sprinkle with reserved Parmesan, and garnish with fresh basil or parsley.
