Creamy Cauliflower Soup

A warm and creamy cauliflower soup that evokes cherished memories and provides comfort on chilly evenings.

Ingredients

Scale
  • 1 head Cauliflower, cut into florets
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Heavy Cream (or coconut cream for a dairy-free option)
  • 4 cups Vegetable Stock
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • Pinch of Nutmeg

Instructions

  1. Prepare the Cauliflower: Begin by washing and cutting the cauliflower into florets. Set aside.
  2. Sauté the Base: In a large pot, heat olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes until they become translucent.
  3. Add the Garlic: Toss in the minced garlic and sauté for another minute, being careful not to burn it.
  4. Incorporate the Cauliflower: Add the cauliflower florets to the pot, stirring well to coat them with the mixture.
  5. Pour in the Stock: Add enough vegetable stock to cover the cauliflower and bring to a boil. Reduce heat and simmer for about 20 minutes until tender.
  6. Blend until Smooth: Remove from heat and blend the soup until silky smooth.
  7. Add the Cream and Season: Stir in the cream, nutmeg, and season with salt and pepper, reheating gently.
  8. Serve and Enjoy: Ladle the soup into bowls and garnish as desired.
