Creamy Chicken Gnocchi Soup

A warm and comforting creamy chicken gnocchi soup filled with tender chicken, pillowy gnocchi, and vibrant vegetables.

  • 1 pound boneless, skinless chicken breasts or thighs
  • 16 ounces potato gnocchi
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prepare your chicken by seasoning it with salt and pepper. Heat olive oil in a large pot over medium-high heat and sear the chicken until golden brown, about 5-7 minutes.
  2. Remove the chicken from the pot and sauté the diced carrots and celery in the same pot for 3-4 minutes.
  3. Add minced garlic and sauté until fragrant, about 30 seconds. Deglaze the pot with a splash of chicken broth.
  4. Pour in the chicken broth, bring to a boil, then add the gnocchi and return the chicken to the pot. Simmer for 8-10 minutes.
  5. Remove the chicken and shred it. Taste the broth, adjust seasoning, then stir in the heavy cream.
  6. Toss in the fresh spinach just before serving, letting it wilt.

Notes

You can substitute leftover roasted chicken for a quicker prep. Adjust seasoning with lemon for brightness if desired.
