Creamy Chicken Soup

A warm and cozy creamy chicken soup, perfect for those chilly days and nostalgic moments.

  • 4 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 2 Carrots, diced
  • 2 Celery Stalks, diced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 6 cups Chicken Broth
  • 1 cup Heavy Cream
  • 1 teaspoon Dried Thyme
  • 2 Bay Leaves
  • Salt and Pepper to taste

Instructions

  1. Start by sautéing the chicken. In a large pot, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the pot. Cook for about 5-7 minutes per side until golden and cooked through. Remove and set aside.
  2. In the same pot, throw in your diced onions, carrots, and celery. Sauté for about 5-6 minutes until the veggies are softened.
  3. Toss in the minced garlic and dried thyme, stirring for about 1 minute until fragrant.
  4. Pour in the chicken broth and bring the mixture to a gentle boil. Let this simmer for about 15 minutes.
  5. While the broth is simmering, shred the cooked chicken with two forks. Toss shredded chicken back into the pot.
  6. Reduce the heat to low, and stir in the heavy cream. Let it cook for another 5-10 minutes, allowing the flavors to meld together beautifully.
  7. Taste and adjust seasoning with salt and pepper. Remove the bay leaves before serving.
  8. Ladle the soup into bowls and enjoy!

Notes

Serve with rustic bread for dipping and garnish with fresh herbs for added flavor.
