  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup wild rice
  • 6 cups low-sodium chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup cream (or half-and-half)
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Gather all your ingredients!
  2. Sauté onions, garlic, carrots, and celery in olive oil for 5-7 minutes.
  3. Add the wild rice and stir for a minute.
  4. Pour in the chicken broth, thyme, and bay leaves. Bring to a boil and then simmer for 45 minutes.
  5. Incorporate the chicken and cream, warming through for another 5-10 minutes.
  6. Season to taste with salt and pepper.
