Parmesan Spinach Pasta

A creamy and zesty Parmesan Spinach Pasta that is perfect for weeknight dinners or casual gatherings.

  • 1/2 lb ziti
  • 4 tbsp butter
  • 4 garlic cloves, minced
  • 1 1/2 tbsp flour
  • 1 cup chicken stock
  • 1 cup half and half
  • 3 tsp lemon juice
  • 3/4 cup parmesan, freshly grated
  • 2 cups spinach
  • 1/2 tsp oregano
  • 1/2 tsp parsley
  • 1/2 tsp mustard powder
  • 1/4 tsp garlic powder
  • 1/4 tsp fresh cracked black pepper
  • 1/8 tsp red pepper flakes

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, add the ziti, and cook until al dente, about 10-12 minutes. Reserve 1/2 cup of pasta water before draining.
  2. Melt the butter in a large skillet over medium heat until it bubbles and foams.
  3. Sauté the garlic in the melted butter for about 1 minute until fragrant.
  4. Add the flour to the skillet and stir continuously for about a minute to form a roux.
  5. Pour in the chicken stock, whisking to combine and eliminate lumps.
  6. Stir in the half and half and simmer for 4-5 minutes.
  7. Get zesty by adding the lemon juice and spices: oregano, parsley, mustard powder, garlic powder, black pepper, and red pepper flakes.
  8. Add the spinach and Parmesan, folding gently until the spinach wilts and the cheese melts.
  9. Combine the cooked ziti with the sauce, adding reserved pasta water if needed to adjust consistency.
  10. Mix well and serve, topped with extra Parmesan and parsley if desired.

Notes

Feel free to customize by adding protein or other vegetables. For a vegan version, use olive oil, cashew cream, and a vegan cheese alternative.
