Creamy Spinach Chicken Soup

A velvety soup that combines tender chicken, vibrant spinach, rich cream, and a hint of parmesan—a perfect comforting dish.

Ingredients

Scale
  • 500g Chicken Breast, skinless and boneless
  • 200g Fresh Spinach
  • 200ml Heavy Cream
  • 100g Parmesan Cheese, grated
  • 1 liter Chicken Broth
  • 2 cloves Garlic, minced
  • 1 medium Onion, diced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste

Instructions

  1. Sauté the aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until golden and fragrant, about 5 minutes.
  2. Add the garlic: Add the minced garlic and sauté for another minute until fragrant.
  3. Cook the chicken: Place the diced chicken breast into the pot, season with salt and pepper, and cook until no longer pink, about 6-8 minutes.
  4. Pour in the broth: Once the chicken is cooked, pour in the chicken broth and bring to a simmer for about 15 minutes.
  5. Add the spinach: Stir in the fresh spinach and let it simmer for another 5 minutes.
  6. Blend for creaminess: Use an immersion blender to blend a portion of the soup until smooth.
  7. Blend in cream and cheese: Remove from heat and stir in the heavy cream and grated Parmesan cheese.
  8. Serve hot: Ladle the soup into bowls and garnish with extra Parmesan or a drizzle of olive oil.

Notes

For a lighter version, substitute heavy cream with half-and-half or coconut milk. Leftovers can be stored in the fridge for up to three days.
