French Onion Pasta

A delightful twist on classic French onion soup, this creamy pasta dish is topped with melty Gruyère cheese, perfect for chilly evenings.

  • 8 oz pasta (your choice)
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 2 cups beef or vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente (about 8-10 minutes). Reserve about a half cup of pasta water before draining.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-low heat. Add the onions with a pinch of salt and sauté for about 10-15 minutes until caramelized.
  3. Add 3 minced garlic cloves and sauté for another 1-2 minutes until fragrant.
  4. Pour in 2 cups of beef or vegetable broth and bring to a simmer. Allow to simmer for about 5-10 minutes.
  5. Lower the heat and stir in 1 cup of heavy cream and then 1 cup of grated Gruyère cheese until melted.
  6. Add the cooked pasta and stir to coat. Season with salt and pepper and add reserved pasta water if needed.
  7. Garnish with fresh thyme leaves before serving.

Notes

You can add shredded chicken, sautéed mushrooms, or greens to enhance the dish. For a vegan option, substitute heavy cream with coconut milk and use plant-based cheese.
