  • 23 medium-sized potatoes (Russet or Yukon Gold)
  • 2 tablespoons taco seasoning
  • 4 cups chicken or beef broth (low-sodium)
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • Fresh cilantro (for topping)
  • Diced tomatoes (for topping)
  • Jalapeños (for topping)
  • Crushed tortilla chips (for topping)

Instructions

  1. Brown the beef in a large pot over medium heat for 5-7 minutes until browned.
  2. Add the taco seasoning to the cooked beef and stir for 1 minute to toast the spices.
  3. Incorporate the diced potatoes into the pot and mix well with the beef.
  4. Pour in the chicken or beef broth and bring to a gentle boil.
  5. Simmer the soup for 15-20 minutes until the potatoes are tender.
