  • 1/2 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 4 cups low-sodium chicken broth
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Prep the chicken: Cut it into bite-sized pieces and season with salt and pepper.
  2. Sauté the garlic: In a large pot, heat olive oil over medium heat and cook the garlic until fragrant.
  3. Brown the chicken: Add the chicken pieces and cook until golden brown, about 5-7 minutes.
  4. Add the sun-dried tomatoes and stir to combine.
  5. Pour in the chicken broth and bring to a gentle simmer.
  6. Add the spinach and cook until wilted.
  7. Reduce the heat and stir in the cream until well combined.
  8. Stir in the Parmesan cheese until melted and creamy.
  9. Serve the soup hot, garnished with additional Parmesan and black pepper as desired.

Notes

This soup can be frozen for up to three months. Adjust cream for a lighter version or use plant-based alternatives for a vegan option.
