Roasted Veggie Soup

A comforting Roasted Veggie Soup made with seasonal vegetables, rich in flavor and perfect for chilly days.

Ingredients

  • 2 large Carrots, diced
  • 2 Bell Peppers (mix of colors), diced
  • 1 large Onion, diced
  • 2–3 cloves Garlic, smashed and minced
  • 2 large Tomatoes, roasted or 1 can crushed tomatoes
  • 3 cups Vegetable Broth
  • 3 tablespoons Olive Oil
  • 1 teaspoon dried Thyme
  • 1 teaspoon dried Basil
  • Pinch of Chili Flakes

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Chop the carrots, bell peppers, and onion into roughly 1-inch chunks.
  3. Give your garlic a good smash and dice it up.
  4. Toss the chopped veggies, including the garlic, in a mixing bowl with olive oil, salt, pepper, and herbs.
  5. Spread the veggies on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway.
  6. Transfer the roasted veggies to a blender, add vegetable broth, and blend until creamy.
  7. Pour the blended mixture back into the pot over medium-low heat, stirring in reserved roasted veggies.
  8. Taste and adjust seasoning as needed before serving.
