Slow Cooker Garlic Butter Beef Bites with Potatoes

Tender beef bites simmered in a savory garlic butter sauce with creamy baby potatoes.

  • 2 lbs (900g) beef stew meat
  • 1 lb (450g) baby potatoes
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients by patting dry the beef stew meat and season generously with salt and pepper.
  2. Sear the beef in a skillet with olive oil until golden brown, about 3-5 minutes on each side.
  3. Transfer the beef to your slow cooker and reserve the skillet for garlic.
  4. Sauté minced garlic in the skillet with melted butter until fragrant, about 1-2 minutes.
  5. Pour the garlic butter over the beef, then add potatoes, broth, Worcestershire sauce, thyme, and rosemary. Stir to combine.
  6. Set your slow cooker on low for 6-8 hours or high for 3-4 hours.
  7. Taste and adjust the seasoning before serving.
  8. Finish with fresh parsley just before serving.

Notes

For added flavor, consider tossing in some carrots or green beans during the last hour of cooking.
