A comforting and nourishing Turkey Vegetable Soup, perfect for chilly days.

Ingredients

Scale
  • 1 pound of lean turkey breast or thighs
  • 2–3 medium carrots, diced
  • 2 stalks of celery, chopped
  • 1 medium onion, diced
  • 2–3 cloves of garlic, minced
  • 6–8 cups of vegetable or chicken broth
  • A handful of fresh parsley, thyme, and bay leaves
  • Salt and pepper, to taste
  • Optional add-ins: 1 cup of frozen peas or corn, zucchini, or green beans

Instructions

  1. Prep your ingredients: Wash and chop vegetables for a smoother cooking process.
  2. Sauté the aromatics: Add olive oil in a large pot, sauté onions until translucent (about 4-5 minutes).
  3. Add the garlic: Cook for an additional minute, being careful not to burn it.
  4. Incorporate the vegetables: Add carrots and celery, stir to soften for about 5 minutes.
  5. Add the turkey: If using raw, chop and sauté until no longer pink (5-7 minutes).
  6. Pour in the broth: Gradually add broth, stirring everything together, and bring to a gentle simmer.
  7. Season and add herbs: Incorporate herbs, salt, and pepper; simmer for 20-25 minutes until veggies are tender.
  8. Final adjustments: Taste and adjust seasoning, add lemon or vinegar for extra zing if desired.
  9. Serve it up: Ladle soup into bowls, garnish with fresh parsley.
