Refreshing Peach Blueberry Kale Salad

A vibrant and nutritious salad featuring juicy peaches, sweet blueberries, crunchy pepitas, and hearty kale, perfect for summer days.

Ingredients

Scale
  • 1 bunch Green Kale, washed and torn
  • 2 Fresh Peaches, sliced
  • 1 cup Sweet Blueberries
  • 2 tbsp Honey or maple syrup
  • 2 tbsp Lemon Juice
  • 1/4 cup Pepitas
  • 2 tbsp Olive Oil
  • Salt & Pepper, to taste

Instructions

  1. Prepare the Kale: Wash and dry thoroughly, then tear or chop into bite-sized pieces. Massage with olive oil and salt.
  2. Slice the Peaches into wedges.
  3. Add Blueberries to the bowl.
  4. Make the Dressing: Whisk together honey, lemon juice, and olive oil, adding salt and pepper to taste.
  5. Combine and Toss: Drizzle the dressing over kale, peaches, and blueberries, and gently toss.
  6. Top with Pepitas just before serving.

Notes

Consider adding grilled chicken or chickpeas for protein. You can also experiment with other nuts or cheeses for added flavor.
