Peach Cobbler Cheesecake Bars

A delightful blend of creamy cheesecake and warm peach cobbler topped with a buttery graham cracker crust.

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups fresh peaches, peeled and sliced
  • 1 tsp cinnamon
  • 1/4 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter in a medium bowl.
  3. Press the crust mixture into the bottom of a greased 9×9-inch baking pan.
  4. Bake the crust for 8-10 minutes or until lightly golden.
  5. Beat the softened cream cheese and 1 cup of sugar together until creamy.
  6. Add the vanilla extract and mix until fully combined.
  7. Incorporate the eggs one at a time, mixing until just combined.
  8. Pour the cheesecake batter over the cooled crust.
  9. Toss the sliced peaches with cinnamon and brown sugar until coated.
  10. Scatter the peaches over the cheesecake layer.
  11. Bake for 35-40 minutes or until the edges are set.
  12. Cool to room temperature and refrigerate for at least 4 hours.

Notes

For an elegant touch, garnish with whipped cream and fresh peach slices before serving.
