Peach Cobbler Cheesecake

A delicious blend of creamy cheesecake and sweet peach cobbler, this dessert is the ultimate comfort food.

  • 1½ cups graham cracker crumbs
  • ½ cup melted butter
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh peaches, sliced
  • ½ teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • ½ cup rolled oats
  • ½ cup cold butter, cubed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs with the melted butter and press into the bottom of a 9-inch springform pan.
  3. Beat the cream cheese and sugar until smooth, add in the vanilla, and mix.
  4. Add the eggs one at a time, mixing until incorporated.
  5. Layer the sliced peaches over the crust and sprinkle with cinnamon.
  6. Combine the flour, brown sugar, and oats, then mix in the cold butter until crumbly.
  7. Sprinkle the crumble topping over the cheesecake filling.
  8. Bake for 50-60 minutes until the edges are set and the center has a slight jiggle.
  9. Cool the cheesecake gradually in the oven with the door cracked before refrigerating for at least 4 hours.

Notes

Serve with caramel sauce or whipped cream and garnish with extra peach slices.
