Peach Cookies

Delightful peach cookies that perfectly marry sweet summer flavors with the comfort of home baking.

Ingredients

  • 2 1/8 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Mix the flour, salt, baking soda, and cinnamon in a large bowl until well combined.
  3. Cream the softened unsalted butter, granulated sugar, and brown sugar together until light and fluffy.
  4. Incorporate the egg and vanilla extract to the butter mixture and mix until combined.
  5. Blend in the dry ingredient mixture gradually, stirring just until combined.
  6. Fold in the diced peaches and peach preserves until the dough is studded with peach pieces.
  7. Scoop generous spoonfuls of dough onto the prepared baking sheets, leaving space between each cookie.
  8. Sprinkle sanding sugar on top of each cookie before baking.
  9. Bake for 12-15 minutes or until lightly golden at the edges.
  10. Cool on the baking sheet briefly before transferring to a wire rack.
