  • 2 Tablespoons Olive Oil
  • 1 Teaspoon Cumin
  • 1 Teaspoon Paprika
  • 1 Teaspoon Garlic Powder
  • Salt and Pepper to Taste
  • 1 Cup Cilantro
  • Juice of 1 Lime
  • 1 Jalapeño (Optional for Spice)
  • 1/2 Cup Greek Yogurt (for sauce)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the olive oil, cumin, paprika, garlic powder, salt, and pepper. Make sure you mix it well!
  2. Meet the Chicken: Place your chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring all pieces get coated beautifully.
  3. Preheat the Oven: About 15 minutes before you’re ready to bake, preheat your oven to 425°F (220°C).
  4. Prepare for Baking: Once the chicken has marinated, transfer it onto a baking sheet lined with parchment paper.
  5. Bake the Chicken: Roast in the oven for 20-25 minutes or until the internal temperature reaches 165°F (75°C).
  6. Make the Green Sauce: In a blender, combine cilantro, lime juice, jalapeño, and Greek yogurt. Blend until smooth.
  7. Serve it Up: Once the chicken is out of the oven, let it rest for 5 minutes before slicing.
