Cozy Pumpkin Chicken Soup

  • 1 lb Chicken (Boneless, Skinless Thighs or Breasts)
  • 1 can Pumpkin Puree
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Cream (Heavy or Coconut Cream)
  • 2 tsp Sage, chopped
  • Salt and Pepper to taste
  • 4 cups Chicken Broth
  • 1 tbsp Olive Oil

Instructions

  1. Prep the ingredients: Start by gathering all your ingredients. Chop the onion and mince the garlic. If you’re using whole chicken pieces, cut them into bite-sized cubes for quicker cooking.
  2. Sauté the aromatics: In a large pot, heat a tablespoon of olive oil over medium heat. Toss in the chopped onions and sauté until they become translucent, about 5 minutes.
  3. Add the garlic: Stir in the minced garlic and cook for another minute.
  4. Brown the chicken: Push the onions and garlic to the side and add the chicken to the pot. Allow it to brown a little on all sides, about 5 minutes.
  5. Mix in pumpkin: Add the pumpkin puree and stir it in, letting it mix with the chicken and aromatics for about 2-3 minutes.
  6. Pour in the liquid: Add about 4 cups of chicken broth, stirring well and bringing it to a gentle simmer.
  7. Season the soup: Toss in the fresh sage, salt, and pepper to taste.
  8. Simmer and thicken: Let the soup simmer for 20-25 minutes, allowing the chicken to cook through.
  9. Finish with cream: Just before serving, stir in the cream and let it simmer for a few more minutes.
  10. Taste and adjust: Before serving, taste the soup and adjust the seasonings if necessary.

Notes

This soup keeps well in the fridge for 3 to 4 days and can be frozen for up to 3 months.
