Pumpkin Roll

A cozy fall dessert with a moist, spiced pumpkin cake rolled with a creamy cream cheese filling.

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 3 large eggs
  • 1 cup granulated sugar
  • 2/3 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 8 oz cream cheese, softened
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven: Set your oven to preheat at 375°F (190°C).
  2. Prepare your pan: Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  3. Sift dry ingredients: In a mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  4. Mix eggs and sugar: In another bowl, beat together the eggs and granulated sugar until light and fluffy, about 3-5 minutes.
  5. Add pumpkin and vanilla: Stir in the pumpkin puree and vanilla extract until well combined.
  6. Combine mixtures: Gradually add the dry ingredients to the wet mixture and mix just until combined.
  7. Spread batter in pan: Pour the batter into your prepared jelly roll pan, spreading it out evenly.
  8. Bake it up: Bake for 13-15 minutes, until the cake springs back when pressed.
  9. Prepare the cooling method: Dust a clean kitchen towel with powdered sugar.
  10. Roll it up: Once baked, flip the cake onto the towel and roll it up from one end. Let cool completely.
  11. Make the filling: Beat together the cream cheese, butter, powdered sugar, and vanilla until smooth.
  12. Unroll and fill: Unroll the cake, spread the filling evenly, and roll back up without the towel.
  13. Chill: Wrap in plastic wrap and refrigerate for at least 1 hour.
  14. Serve and enjoy: Slice and serve with a drizzle of caramel or chocolate sauce if desired.

You can make this a day in advance, and it keeps well in the fridge.
