The Ultimate Pumpkin Whoopie Pies

Delightful pumpkin whoopie pies filled with a dreamy cream cheese filling, perfect for fall.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Maple syrup (for drizzling, optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the pumpkin puree, brown sugar, and granulated sugar in a large mixing bowl until well blended.
  3. Add the vegetable oil and eggs, and beat until smooth.
  4. Combine the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in another bowl.
  5. Fold the dry ingredients into the wet ingredients until just combined.
  6. Scoop heaping spoonfuls of the batter onto a lined baking sheet, leaving space between each one.
  7. Bake for 12-15 minutes, until the edges are set and centers are soft.
  8. Cool the whoopie pies on a wire rack.
  9. Prepare the filling by beating the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Assemble the pies by spreading a dollop of filling on one cake and sandwiching it with another.

Notes

These whoopie pies can be made gluten-free by substituting with 1:1 flour. Try adding chocolate chips for a fun twist!
