Mango Sticky Rice

A delightful dessert made with creamy coconut, sweet mango, and chewy sticky rice.

Ingredients

  • 1 cup sticky rice (glutinous rice)
  • 1 1/2 cups coconut milk
  • 1/2 cup sugar (or alternative sweetener)
  • 1/4 teaspoon salt
  • 2 ripe mangoes, peeled and sliced
  • Sesame seeds or mung beans for garnish (optional)

Instructions

  1. Rinse the sticky rice in cold water until the water runs clear.
  2. Soak the rinsed rice in water for at least 4 hours or overnight.
  3. Drain the soaked rice and transfer it to a bamboo steamer lined with cheesecloth.
  4. Steam over simmering water for about 20-25 minutes.
  5. Combine the coconut milk, sugar, and salt in a saucepan over low heat.
  6. Stir until the sugar dissolves completely—don’t let it boil!
  7. Transfer the steamed rice to a large bowl and pour about 1 cup of the coconut sauce over it.
  8. Stir gently to combine and allow to soak for about 30 minutes.
  9. Plate the sticky rice and arrange mango slices beside it.
  10. Drizzle with the reserved coconut sauce and sprinkle with sesame seeds or mung beans for garnish.

Notes

You can add a handful of shredded coconut or chopped pineapple for a tropical twist.
