  • 1 cup fresh raspberries
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the almond milk, chia seeds, maple syrup, and vanilla extract in a medium mixing bowl.
  2. Let the mixture sit for about 5-10 minutes to allow the chia seeds to expand.
  3. Whisk the mixture again to ensure a smooth texture.
  4. Fold in the fresh raspberries gently.
  5. Transfer the pudding into serving glasses or jars, cover, and refrigerate for at least a couple of hours, ideally overnight.
  6. Serve with optional toppings like extra raspberries or granola.

Notes
