Ratatouille

A colorful and flavorful dish made with summer vegetables, perfect for a comforting dinner or healthy meal prep.

Ingredients

  • 2 medium eggplants, diced
  • 2 zucchinis, sliced
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 tomatoes, chopped or 1 can of diced tomatoes
  • 1/4 cup olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Prep your veggies by washing them thoroughly. Dice the eggplants, slice the zucchinis, chop the onion, and mince the garlic.
  2. Sauté the aromatics in a large skillet with olive oil over medium heat until the onion is translucent (about 3-4 minutes).
  3. Add the diced eggplant and cook until softened (about 5-7 minutes).
  4. Introduce the sliced zucchini and diced bell pepper, cooking for another 5 minutes.
  5. Embrace the chopped tomatoes, stirring and seasoning with salt, pepper, thyme, and basil. Simmer the mixture.
  6. Let it cook on low for about 20-30 minutes until flavors meld together.
  7. Garnish with fresh basil and serve warm.

Notes

Ratatouille tastes better the next day as flavors meld. Great as a side dish to fish or grilled meats.
