Reuben Soup

A cozy twist on the classic Reuben sandwich, this hearty soup combines corned beef, tangy sauerkraut, and creamy Swiss cheese for a comforting meal.

  • 1 pound Corned Beef
  • 1 cup Sauerkraut
  • 1 cup Swiss Cheese, shredded
  • 1 cup Cream
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 tsp Caraway Seeds
  • Salt & Pepper to taste

Instructions

  1. Prep your ingredients: Chop the onion and mince the garlic cloves. Shred the Swiss cheese and set it aside.
  2. Sauté onions and garlic: In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onions and cook for about 5 minutes until soft and translucent, then add the minced garlic and sauté for an additional minute.
  3. Layer in the flavors: Stir in the corned beef, break it into bite-sized pieces, and allow it to heat through. Toss in sauerkraut and caraway seeds, letting everything mingle for a couple of minutes.
  4. Time for liquid gold: Pour in the chicken broth gradually while stirring, followed by the cream. Bring to a gentle simmer.
  5. Let it simmer: Allow the soup to simmer for about 15 minutes. Stir occasionally.
  6. Cheesy finish: Gradually stir in the shredded Swiss cheese, allowing it to melt into the soup. Taste and season with salt and pepper as needed.
