Nectarine Streusel Pie

A delightful Nectarine Streusel Pie made with juicy nectarines in a sweet filling, topped with a buttery streusel.

  • 4 large nectarines, sliced
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • 1 pre-made pie crust
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1/2 cup cold butter, cubed
  • 1/2 teaspoon cinnamon
  • Vanilla ice cream (for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the nectarines: In a large bowl, combine the sliced nectarines, granulated sugar, cornstarch, vanilla extract, and lemon juice. Let it sit for about 10 minutes.
  3. Roll out the pie crust into a 9-inch pie pan.
  4. Fill the crust with the prepared nectarines.
  5. Make the streusel topping by combining flour, brown sugar, rolled oats, cold butter, and cinnamon in a medium bowl.
  6. Sprinkle the streusel over the nectarines.
  7. Bake the pie for 35 to 40 minutes, or until golden brown and bubbling.
  8. Cool for 10-15 minutes before slicing. Serve warm with vanilla ice cream.

Notes

For a gluten-free option, use a gluten-free pie crust and flour blend. Leftover pie can be stored in an airtight container for up to 3 days.
