  • 6 cups watermelon (seeded and cubed)
  • 1 English cucumber (chopped)
  • 6 oz feta cheese (cubed)
  • Handful of chopped fresh mint leaves
  • 1 fresh lime (zest and juice)
  • Sea salt flakes and fresh ground black pepper (to taste)

Instructions

  1. Prepare the watermelon by cutting it into bite-sized cubes.
  2. Chop the cucumber into half-moons or cubes.
  3. Crumble the feta cheese or cut it into small cubes.
  4. Assemble the salad by combining the watermelon, cucumber, and feta in a large bowl.
  5. Add lime zest and juice to the salad.
  6. Season with sea salt flakes and black pepper, then toss gently.
  7. Finish with chopped mint leaves and toss again.

Notes

This salad is best enjoyed fresh, but leftovers can last 1-2 days in the fridge. Add mint, lime juice, and feta just before serving to maintain freshness.
