1 pound ground beef
4 bell peppers (red, yellow, or green)
1 onion, chopped
2 cloves garlic, minced
1 cup cooked rice
1 can diced tomatoes
1 teaspoon chili powder
1 teaspoon cumin
Salt to taste
1 cup shredded cheese
Instructions
Prep the peppers: Preheat your oven to 375°F (190°C). Wash your bell peppers, slice the tops off, and scoop out the seeds.
Cook the filling: In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat, then add onion and garlic, sautéing until translucent, about 3-5 minutes.
Combine with other ingredients: Add cooked rice, diced tomatoes, chili powder, cumin, and salt to the skillet. Stir and let flavors meld for 3-4 minutes. Taste and adjust seasoning if necessary.
Stuff those peppers: Fill each bell pepper with the mixture until overflowing. Place them upright in a baking dish with a splash of water (about ¼ cup) to steam.
Cheesy goodness: Sprinkle shredded cheese on top of each stuffed pepper and add chopped tops.
Bake them up: Cover with foil and bake for 25-30 minutes. Remove foil and bake until the cheese is golden, about 10-15 minutes.
Serve and enjoy: Let cool for a few minutes before serving!
