Slow Cooker Garlic Butter Beef with Potatoes

A heartwarming slow-cooked dish featuring tender beef, aromatic garlic, and buttery Yukon Gold potatoes, perfect for family gatherings.

  • 2.5 lbs beef chuck roast, cut into large chunks
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (for searing, optional)
  • 6 tbsp unsalted butter, melted
  • 5 cloves garlic, minced
  • 1 tsp dried Italian herbs
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/4 cup fresh parsley, chopped (plus more for garnish)
  • 2 lbs baby Yukon Gold potatoes, halved
  • 1/2 cup low-sodium beef broth
  • 1 medium onion, sliced (optional)
  • 1 cup carrots, chopped (optional)

Instructions

  1. Season the beef chunks generously with salt and black pepper. If you’re opting to sear the beef, heat the olive oil in a large skillet over medium-high heat. Once hot, add the beef in batches, browning it on all sides—about 3-4 minutes per side.
  2. Combine the melted butter, minced garlic, dried Italian herbs, and red pepper flakes (if using) in a mixing bowl. Stir well and set aside.
  3. Layer Yukon Gold potatoes at the bottom of the slow cooker.
  4. Add sliced onions and chopped carrots on top of the potatoes (if using).
  5. Nestle the seasoned beef on top of the veggies. Drizzle half of your garlic butter mixture over the beef and pour the beef broth around the edges.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  7. Check if the beef is fork-tender. If so, drizzle the remaining garlic butter mixture over the top and sprinkle with freshly chopped parsley.
