Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your baking sheets by lining them with parchment paper.
  3. In a large mixing bowl, combine the pumpkin puree, melted butter, brown sugar, and granulated sugar. Whisk until smooth.
  4. Add in the egg and vanilla extract, mixing until well combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  6. Gradually add the dry ingredients to your wet mixture, stirring gently.
  7. Fold in the chocolate chips with a spatula.
  8. Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto your prepared baking sheets.
  9. Bake for 10-12 minutes until just barely set.
  10. Once baked, let them cool on the baking sheet for 5 minutes before transferring to a wire rack.
