Spinach Tomato Salad

A vibrant spinach tomato salad featuring fresh ingredients and a simple dressing that’s perfect for any occasion.

Ingredients

  • 8 cups of Fresh Spinach Leaves
  • 2 cups of Tomatoes, chopped (heirloom, cherry, or Roma)
  • 3 tablespoons of Olive Oil
  • Juice of half a Lemon
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Wash the spinach leaves thoroughly under cold water and dry them with a salad spinner or towel.
  2. Chop the tomatoes into your preferred size.
  3. Whisk together olive oil and lemon juice in a small bowl, seasoning with salt and pepper.
  4. Toss the dried spinach and chopped tomatoes in a large bowl, drizzling the dressing over the top.
  5. Transfer the salad to a serving platter, garnishing with whole spinach leaves and fresh pepper.

Notes

For added creaminess, top with crumbled feta or goat cheese. Be sure to dry the spinach thoroughly to avoid sogginess.
