  • 1 cup pistachios, shelled
  • 4 cups mixed salad greens
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the greens: Wash the mixed greens thoroughly under cold water and dry them using a salad spinner.
  2. Slice the onions: Thinly slice the red onion and soak in cold water for 10 minutes if you prefer a milder flavor.
  3. Prep the pistachios: Roast unsalted pistachios in a dry skillet over medium heat for 3-5 minutes until fragrant, if desired.
  4. Make the dressing: Whisk together olive oil and balsamic vinegar in a small bowl, adding salt and pepper to taste.
  5. Combine everything: Toss mixed greens, blueberries, sliced red onions, and pistachios in a large mixing bowl with the dressing.
  6. Plate with intention: Arrange the salad on a large serving platter and scatter the crumbled feta on top if using.
