Strawberry Banana Bread

A delightful twist on classic banana bread featuring fresh strawberries for a sweet and vibrant flavor.

  • 2 cups pancake mix
  • 1 cup mashed ripe bananas
  • 1 cup diced strawberries
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • Optional: Strawberry glaze for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing it and optionally lining the bottom with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add the sugar, eggs, milk, oil, and vanilla extract to the mashed bananas and whisk until well combined.
  5. Combine the pancake mix in a separate bowl, then slowly fold into the wet ingredients until just combined.
  6. Fold in the diced strawberries gently.
  7. Pour the batter into the prepared loaf pan, filling it about 3/4 full.
  8. Bake for 45–55 minutes, checking for doneness with a toothpick.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Optional: Prepare the strawberry glaze and drizzle it over the cooled bread.

Notes

Don’t overmix the batter to keep the bread tender and fluffy. Feel free to add nuts or chocolate for variations.
