Strawberry Pie

A delightful Strawberry Pie bursting with sweet, juicy strawberries and coated in a luscious glaze, perfect for summer gatherings.

Ingredients

Scale
  • 1 (9-inch) frozen pie crust (baked)
  • 1 cup sugar
  • 1 ½ cups water
  • ¼ cup cornstarch
  • 1 lb strawberries (sliced)
  • 1 (3 oz) package strawberry Jell-O

Instructions

  1. Bake the Pie Crust: Preheat your oven to 350°F (175°C). Place the frozen pie crust in the oven and bake it according to package instructions, usually around 10-12 minutes until golden brown.
  2. Prepare the Glaze: In a medium saucepan, whisk together the sugar and cornstarch. Gradually add in the water, stirring until smooth. Place the saucepan over medium heat, stirring constantly until the mixture thickens and bubbles (about 5-7 minutes).
  3. Add the Jell-O: Once your glaze is thickened, remove it from heat and stir in the strawberry Jell-O packet until completely dissolved.
  4. Slice the Strawberries: While your glaze is cooling, slice the strawberries into even pieces.
  5. Combine Strawberries and Glaze: In a large bowl, gently toss the sliced strawberries with the cooled glaze.
  6. Fill the Crust: Pour the strawberry mixture into the baked pie crust, spreading out the strawberries.
  7. Chill the Pie: Cover the pie with plastic wrap or foil and refrigerate for at least 2 hours.

Notes

For serving, top each slice with whipped cream or vanilla ice cream, and garnish with a mint leaf or grated lemon zest for extra flavor.
