Strawberry Shortcake Muffins

Delightful muffins bursting with juicy strawberries, perfect for breakfast or an afternoon treat.

  • 2 cups all-purpose flour (250g)
  • 2 teaspoons baking powder
  • 3/4 cup granulated sugar (150g)
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted (115g)
  • 3/4 cup milk (180ml)
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 to 1 1/2 cups fresh strawberries, diced (150-225g)
  • Optional: coarse sugar for sprinkling on top

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the muffin tin with liners or grease it lightly.
  3. Mix the flour, baking powder, sugar, and salt in a large bowl.
  4. Melt the butter and let it cool slightly.
  5. Combine the melted butter, milk, vanilla extract, and eggs in a separate bowl.
  6. Blend the wet ingredients into the dry ingredients until just combined.
  7. Fold in the diced strawberries gently.
  8. Fill the muffin cups about two-thirds full with the batter.
  9. Sprinkle coarse sugar on top if using.
  10. Bake for 18-20 minutes or until a toothpick comes out clean.
  11. Cool for 5 minutes in the tin, then transfer to a wire rack.

Notes

For variations, try adding chocolate chips, lemon zest, or nuts.
