Stuffed Cabbage Rolls

A comforting dish of tender cabbage leaves wrapped around a flavorful filling, all bathed in a rich tomato sauce. Perfect for family gatherings!

  • 1 large head of green cabbage (about 1215 leaves)
  • 1 lb (450 g) ground beef (or a mix of beef & pork)
  • 1 cup cooked white rice (about ½ cup uncooked)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 large egg (lightly beaten)
  • 2 tbsp fresh parsley (chopped) (or 1 tsp dried)
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil or butter
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 can (28 oz / 800 g) crushed tomatoes (or tomato puree)
  • 2 tbsp tomato paste
  • 1 tsp sugar (to balance acidity)
  • 1 tsp paprika
  • 1 tsp dried oregano (or Italian seasoning)
  • ½ tsp salt (to taste)
  • ½ tsp black pepper
  • 1 cup beef or chicken broth

Instructions

  1. Prepare the Cabbage: Bring a large pot of salted water to a boil and peel off 12-15 leaves from the head of cabbage. Blanch the leaves in boiling water for about 2-3 minutes until tender. Drain and set aside to cool.
  2. Make the Filling: In a large mixing bowl, combine ground beef or pork, cooked rice, onion, garlic, beaten egg, parsley, paprika, salt, and pepper. Mix gently.
  3. Assemble the Rolls: Take a cabbage leaf and place about 2-3 tablespoons of filling at the stem end. Fold in the sides and roll up tightly. Place seam-side down on a plate or baking dish.
  4. Make the Sauce: In a large skillet, heat olive oil or butter over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and cook for another minute. Stir in crushed tomatoes, tomato paste, sugar, paprika, oregano, salt, and pepper. Simmer for about 10 minutes.
  5. Bake the Rolls: Layer rolls in a baking dish, pour about a cup of sauce on the bottom, place cabbage rolls seam-side down, pour remaining sauce over rolls. Cover with foil and bake at 350°F (175°C) for about 45 minutes.

Notes

For a vegetarian version, use lentils or black beans instead of meat. Adjust seasonings to your taste.
