Nectarine Crisp with Cinnamon Oat Pecan Streusel

  • 1 cup toasted chopped pecans
  • 1 ⅓ cups old-fashioned oats
  • 1 cup light brown sugar
  • ¾ teaspoon ground cinnamon
  • 9 tablespoons unsalted butter, very soft
  • ½ teaspoon kosher salt
  • 78 cups chopped nectarines (about 89 large nectarines)
  • ¾ cup granulated sugar
  • 2 tablespoons cornstarch
  • ¾ teaspoon ground cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch rectangular baking dish by lightly buttering the bottom and sides.
  3. Make the streusel topping by combining the softened butter, flour, toasted pecans, oats, brown sugar, cinnamon, and salt in a medium bowl until crumbs form.
  4. Chop the nectarines into bite-sized pieces.
  5. Toss the chopped nectarines with granulated sugar, cornstarch, cinnamon, and lemon juice in a large bowl.
  6. Assemble the nectarine mixture in the prepared baking dish and top with the streusel mix.
  7. Bake for about 35-45 minutes, until the topping is golden brown and the filling is bubbling.
  8. Cool for about 10-15 minutes before serving.
