Taco Potatoes

Fluffy baked potatoes loaded with savory beef, zesty toppings, and melted cheese, bringing the taco experience to a cozy comfort food.

  • 4 large baking potatoes
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup lettuce, shredded
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the baking potatoes by washing them, poking holes, drizzling with olive oil, and seasoning with salt and pepper.
  3. Bake the potatoes directly on the oven rack for 45–60 minutes until fork-tender.
  4. Cook the ground beef in a skillet over medium heat with olive oil until browned, then add taco seasoning and a splash of water.
  5. Assemble the taco potatoes by slicing them open and fluffing the insides.
  6. Layer with seasoned beef, cheese, lettuce, sour cream, and salsa.
  7. Enjoy! Serve warm, garnished with extra toppings if desired.

Notes

For a vegetarian version, substitute the beef with lentils or black beans. Feel free to customize toppings to your liking.
