Turkey Spinach Quesadilla

A deliciously cheesy and nutritious twist on a classic quesadilla, packed with turkey and fresh spinach.

  • 4 Whole Wheat Tortillas
  • 1 lb Ground Turkey
  • 2 cups Fresh Spinach
  • 1 cup Shredded Cheese (Monterey Jack & Cheddar)
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Prepare your ingredients: Chop your onion, mince the garlic, and wash the spinach.
  2. Sauté the aromatics: In a large skillet, heat olive oil over medium heat and add onion, cooking until golden.
  3. Cook the turkey: Add ground turkey to the skillet, breaking apart with a spatula, season, and cook until no longer pink.
  4. Add the spinach: Toss in fresh spinach and allow to wilt for 2-3 minutes.
  5. Assemble the quesadilla: Spread half the mixture on one side of a tortilla, top with cheese, and fold over.
  6. Toast the quesadilla: Cook in the skillet until golden and crispy, about 3-4 minutes per side.
  7. Slice and serve: Cut into wedges and enjoy with your favorite toppings.

Notes

Feel free to use other types of tortillas or cheese. You can also make vegetarian versions with beans or mushrooms.
