A colorful and flavorful Korean Carrot Salad that’s fresh, tangy, and irresistibly crunchy.

  • 4 large Carrots, peeled and grated
  • 2 cloves Garlic, minced
  • 2 Green Onions, chopped
  • 2 tablespoons Sesame Oil
  • 3 tablespoons Rice Vinegar
  • 1 tablespoon Sugar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Seeds, toasted
  • Chili Flakes, to taste

Instructions

  1. Prep your ingredients: Peel and grate the carrots using a box grater or food processor.
  2. Mix the dressing: In a medium bowl, combine minced garlic, sesame oil, rice vinegar, soy sauce, and sugar. Whisk until the sugar dissolves.
  3. Toss it all together: In a large mixing bowl, add the grated carrots, chopped green onions, and chili flakes, then pour the dressing over the top and toss everything together.
  4. Let it marinate: Allow the salad to sit for at least 15 minutes, or refrigerate for an hour for the flavors to meld.
  5. Toast the sesame seeds: Heat a dry pan over medium heat, add sesame seeds, and toast for 2-3 minutes until golden.
  6. Serve with flair: After marinating, give the salad another toss, plate in a colorful bowl, and sprinkle toasted sesame seeds on top.

Notes
