Vibrant Roasted Tomato Caprese Salad

A delightful Caprese salad featuring roasted tomatoes, fresh mozzarella, and aromatic basil, perfect for summer gatherings.

  • 4 Roma Tomatoes
  • 8 oz Fresh Mozzarella Cheese
  • 1 cup Fresh Basil
  • 2 tbsp Olive Oil
  • 2 tbsp Balsamic Glaze
  • Salt to taste
  • Freshly cracked black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prep your Roma tomatoes by washing and slicing them in half lengthwise.
  3. Drizzle olive oil over the tomatoes and sprinkle with salt and pepper.
  4. Roast in the oven for 25-30 minutes until soft and caramelized.
  5. Prep the mozzarella by slicing it into thick rounds and tearing fresh basil leaves.
  6. Assemble the salad by layering roasted tomatoes and mozzarella on a platter, topped with fresh basil.
  7. Drizzle with balsamic glaze for the finishing touch.
  8. Finalize with an additional sprinkle of salt and pepper.
