Creamy Spinach Artichoke Soup

A creamy and comforting Spinach Artichoke Soup, perfect for chilly evenings and family gatherings.

Ingredients

Scale
  • 4 cups Fresh Spinach
  • 1 can or 2 cups fresh Artichoke Hearts
  • 8 ounces Cream Cheese
  • 1 cup grated Parmesan Cheese
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable Broth
  • Salt & Pepper to taste

Instructions

  1. Sauté the aromatics: Start by heating a splash of olive oil in a large pot over medium heat. Add the diced onions and sauté until they’re translucent, around 5 minutes.
  2. Add the garlic: Once the onions are ready, throw in the minced garlic. Sauté it for an additional minute until fragrant.
  3. Introduce the spinach: Gradually add the fresh spinach to the pot, stirring until it wilts down, about 2-3 minutes.
  4. Toss in the artichokes: Next, add your drained artichoke hearts and stir everything together.
  5. Pour in the broth: Slowly pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat to a simmer and let it blend for about 10-15 minutes.
  6. Blend for creaminess: Remove the pot from heat and blend the soup until you’ve reached your desired consistency.
  7. Incorporate cream cheese and Parmesan: Return the pot to low heat and stir in the cream cheese and grated Parmesan until melted.
  8. Season to taste: Adjust seasoning with salt and pepper, and add a squeeze of lemon juice if desired.
  9. Final simmer: Allow the soup to simmer for another 5 minutes, stirring occasionally.

Notes

This soup freezes well for up to 3 months. Adjust seasoning gradually, tasting as you go for the best flavor.
