Texas Roadhouse Smothered Chicken

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil (or butter)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup sliced mushrooms
  • 1 small onion (thinly sliced)
  • 1 cup shredded mozzarella cheese (or Monterey Jack)
  • ½ cup shredded cheddar cheese
  • 2 tablespoons fresh parsley (chopped, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels and season with paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil (or butter) in a large oven-safe skillet over medium-high heat and carefully add the chicken breasts.
  4. Cook for 5-7 minutes on each side until golden brown.
  5. Remove chicken from the skillet and set aside. In the same skillet, add the sliced onions and mushrooms and sauté them for 4-5 minutes until tender.
  6. Return the chicken to the skillet, spreading the sautéed onions and mushrooms over the top. Sprinkle first with mozzarella, then top off with cheddar cheese.
  7. Transfer the skillet to the preheated oven and bake for about 20-25 minutes, until the chicken is cooked and cheese is bubbly.
  8. Let the dish cool for a few minutes and sprinkle with chopped parsley before serving.

Notes

Serve with mashed potatoes or roasted vegetables for a complete meal. This recipe can be made ahead of time by preparing the chicken and vegetables and baking when ready.
