Pesto Pasta with Roasted Tomatoes

A vibrant and flavorful pasta dish coated in fresh basil pesto and topped with sweet, caramelized roasted tomatoes. Perfect for any occasion!

Ingredients

  • Pasta (your choice, e.g., spaghetti, penne)
  • Fresh basil pesto
  • Tomatoes (cherry or grape)
  • Olive oil
  • Salt and pepper
  • Parmesan cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the tomatoes by washing and slicing them in half. Arrange on a baking sheet with cut side up, drizzling olive oil and seasoning with salt and pepper.
  3. Roast the tomatoes for about 20-25 minutes until softened and caramelized.
  4. Cook the pasta in a pot of salted boiling water according to package directions. Reserve a cup of pasta water before draining.
  5. Combine the drained pasta with roasted tomatoes and a generous heap of basil pesto, adding reserved pasta water to reach desired consistency.
  6. Taste and adjust with more pesto, salt, or pepper as needed.
  7. Serve in bowls, garnished with grated Parmesan cheese and fresh basil leaves.
