Creamy Scalloped Potatoes

  • 4 large potatoes, thinly sliced (Russet or Yukon Gold)
  • 2 cups shredded cheese (cheddar or Gruyere)
  • 1 cup heavy cream
  • 1 cup milk
  • 2 cloves garlic, minced
  • 1 onion, finely chopped
  • Salt and pepper, to taste
  • 2 tablespoons butter (for greasing)

Instructions

  1. Preheat your oven to 375°F (190°C) and butter a 3-quart baking dish.
  2. Slice the potatoes into 1/8-inch rounds using a sharp knife or mandolin slicer.
  3. Sauté the onions in melted butter over medium heat for 5 minutes, then add minced garlic for another minute.
  4. Layer a third of the potatoes in the dish, season with salt and pepper, and add sautéed onions and garlic, followed by cheese. Repeat two more times.
  5. Mix heavy cream and milk in a bowl, then pour evenly over the layered potatoes.
  6. Bake covered with foil for 45 minutes, then uncovered for an additional 15-20 minutes until golden brown.
  7. Let the dish rest for 10 minutes before serving.
