Cozy Zuppa Toscana

A hearty, comforting soup made with Italian sausage, potatoes, kale, and heavy cream, perfect for chilly evenings.

Ingredients

  • 1 lb Italian sausage
  • 4 medium Yukon Gold or Russet potatoes, diced
  • 2 cups kale, shredded
  • 1 cup heavy cream
  • 6 cups chicken broth
  • 3 cloves garlic, minced
  • 1 onion, diced
  • Olive oil for sautéing
  • Salt and pepper to taste
  • Red pepper flakes (optional)
  • Freshly grated Parmesan cheese for serving

Instructions

  1. Sauté the sausage in a large pot with olive oil until browned, about 5-7 minutes.
  2. Add diced onions and minced garlic, sautéing until translucent, around 3-4 minutes.
  3. Stir in diced potatoes and chicken broth, bringing to a boil before reducing to a simmer for 10-15 minutes until potatoes are tender.
  4. Incorporate the heavy cream and kale, simmering for another 5-7 minutes.
  5. Season with salt, pepper, and red pepper flakes to taste.
  6. Serve in bowls topped with grated Parmesan cheese.

Notes

This soup freezes well up to 3 months. To store leftovers, keep in an airtight container in the fridge for 3-4 days.
